Roasted Eggplant Dip

 Ingredients

1 Eggplant
2 Cloves of garlic
1/2 Chilli
Paprika
1 tsp of Tahini 
1 Onion
1/2 squeezed lemon
Dried Basil
Cracked Pepper and Salt

Method
Preheat the oven to 150 degrees and place eggplant, garlic and chilli in a baking tray.

Bake for 30 mins or till soft.
In a blender place roasted eggplant and the rest of the ingredients.
Blend till smooth.

Moroccan Chicken

Ingredients

Chicken drum sticks
1 tsp Cumin
2 tsp Paprika
2 cloves Garlic
1 Onion
1 red chilli
1 tsp of thyme
1/2 tsp of basil
2 tsp of chopped parsley
Splash of white vinegar
1/4 of Lemon

Method
Mix herbs and chopped onion, garlic and the juice of the lemon in a bowl.
Whisk till well mixed.
Wash Chicken and place in a mix in the marinade and let it sit for a couple of hours.

After a couple of hours place in a baking tray and bake for an hour at 130 degrees.

Autumn Blues

In this kind of weather it is important to keep your selve hydrated and warm to protect your selve from cold and flues. What I love to do in the weather is make a big pot of herbal tea and sip on it all day. Choose a tea you love and enjoy that way you will want to drink it.
